Preparation

    Prepare the Potatoes

    Peel and dice the potatoes into small cubes. Boil them in salted water for about 10 minutes or until tender. Drain and set aside.

    Cook the Hash

    In a large skillet, heat olive oil over medium heat. Add the cooked potatoes and sauté until they start to brown, about 5-7 minutes.

    Add Seafood

    Add the smoked salmon, flaked white fish, capers, parsley, chives, salt, and black pepper to the skillet. Stir gently to combine and heat through, about 3-5 minutes.

    Poach the Eggs

    In a separate pot, bring water to a simmer. Crack each egg into a small bowl and gently slide it into the simmering water. Poach for about 3-4 minutes for a runny yolk. Remove with a slotted spoon.

    Serve

    Divide the seafood hash into bowls, top each serving with a poached egg, and drizzle with hollandaise sauce.
