Preparation Steps

    Prepare the Salmon

    Preheat the oven to 375°F (190°C). In a bowl, whisk the eggs. In another bowl, combine the grated Parmesan and chopped fresh herbs. Dip each salmon fillet in egg, then coat with the Parmesan-herb mixture. Place on a greased baking sheet.

    Bake the Salmon

    Bake the salmon in the preheated oven for 15-20 minutes, or until the salmon flakes easily with a fork.

    Make the Lemon-Caper Butter

    In a small saucepan, melt the butter over medium heat. Add the capers and lemon juice, and cook for 2-3 minutes until heated through. Set aside.

    Cook the Rice Pilaf

    In a saucepan, combine the multigrain rice and wild rice with 3 cups of water. Bring to a boil, reduce heat, cover, and simmer for about 40-45 minutes or until the rice is tender and water is absorbed. Fluff with a fork.

    Sauté the Vegetables

    In a skillet, heat olive oil over medium heat. Add the vegetable mix and sauté for 5-7 minutes or until tender. Season with salt and black pepper to taste.

    Serve

    Plate the baked salmon and drizzle with lemon-caper butter. Serve with the multigrain-wild rice pilaf and sautéed vegetables on the side.
