    Prepare the Ingredients

    Chop the smoked bacon, onion, celery, and garlic. Set aside.

    Cook the Bacon

    In a large pot, cook the chopped smoked bacon over medium heat until crispy. Remove and set aside, leaving the fat in the pot.

    Sauté Vegetables

    In the same pot, add butter, and sauté the onion, garlic, and celery until they are soft and fragrant.

    Combine Ingredients

    Add the oysters, thyme, and heavy cream to the pot. Stir gently to combine. Allow it to simmer for about 5-7 minutes, until the oysters are cooked through.

    Season the stew with salt and black pepper to taste. Stir in the crispy bacon.
