    Sauté the Vegetables

    In a large pot, heat the olive oil over medium heat. Add the chopped onion, celery, carrot, and red bell pepper. Sauté until the vegetables are tender, about 5-7 minutes.

    Stir in the minced garlic and tomato paste, cooking for an additional 2 minutes until fragrant.

    Add Broth and Seasoning

    Pour in the chicken or vegetable broth, and add the bay leaves, Old Bay seasoning, salt, and black pepper. Bring the mixture to a boil.

    Reduce the heat to a simmer and cook for about 15-20 minutes to allow the flavors to meld.
