    Prepare the Ingredients

    Chop artichoke hearts, roasted red peppers, and Kalamata olives into small pieces. Rinse and chop spinach. Set aside.

    Beat the Eggs

    In a bowl, whisk together the eggs, salt, and black pepper until well combined.

    Cook the Vegetables

    In a non-stick skillet, heat olive oil over medium heat. Add the chopped artichoke hearts, roasted red peppers, Kalamata olives, and spinach. Sauté for about 3-4 minutes until the spinach is wilted.

    Add the Eggs

    Pour the beaten eggs over the sautéed vegetables in the skillet. Gently stir to combine. Cook for 5-7 minutes, or until the eggs are set.

    Add Feta Cheese

    Sprinkle the goat feta cheese on top of the omelet. Fold the omelet in half and cook for another 1-2 minutes until the cheese is slightly melted.
