    Prepare the Dough

    In a large mixing bowl, cream together the unsalted butter and granulated sugar until light and fluffy. Add the lemon zest and thyme leaves, mixing until well incorporated.

    Combine Dry Ingredients

    In a separate bowl, whisk together the all-purpose flour and salt. Gradually add the dry mixture to the butter mixture, stirring until just combined.

    Chill the Dough

    Shape the dough into a log or disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

    Preheat the Oven

    Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

    Once chilled, slice the dough into 1/4 inch thick pieces and arrange them on the prepared baking sheet. Bake for 12-15 minutes or until the edges are lightly golden.
