Lemon Curd Preparation

    Zest the lemons and then juice them. You should have about 1 cup of lemon juice.

    In a medium saucepan, combine the lemon juice, lemon zest, sugar, and eggs. Whisk until well combined.

    Place the saucepan over medium heat and cook while stirring constantly until the mixture thickens and coats the back of a spoon, about 10-15 minutes.
