    Prepare the Home Fries

    Dice the potatoes and boil them in salted water until tender. Drain and set aside.

    Pan-Sear the Crab Cakes

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the crab cakes and pan-sear for about 4-5 minutes on each side until golden brown. Remove from the skillet and keep warm.

    Griddle the Tomatoes

    In the same skillet, add more olive oil if necessary and griddle the whole tomatoes until slightly charred and warmed through. Remove and set aside.

    Poach the Eggs

    Bring a pot of water to a gentle simmer. Crack each egg into a small bowl and gently slide them into the water. Poach for about 3-4 minutes for soft yolks. Remove with a slotted spoon and drain on paper towels.

    Toast the English Muffins

    Split the English muffins and toast them until golden brown.

    Assemble the Dish

    On each toasted muffin half, layer the griddled tomato, followed by a crab cake, and finally a poached egg. Drizzle generously with hollandaise sauce and serve with home fries on the side.
