    Prepare the Mornay Sauce

    In a saucepan, melt 2 tablespoons of butter over medium heat. Add the sliced mushrooms and sauté until tender. Pour in the sherry and cook until evaporated. Stir in the gruyère cheese until melted and smooth. Set aside.

    Prepare the Omelet

    In a mixing bowl, whisk together the eggs, milk, salt, and pepper until well combined. Heat a non-stick skillet over medium heat and add 1 tablespoon of butter.

    Cook the Omelet

    Pour half of the egg mixture into the skillet and cook until the edges begin to set. Add half of the crabmeat and half of the mornay sauce on one half of the omelet. Sprinkle with fresh herbs. Fold the omelet in half and cook for an additional minute. Slide onto a plate and keep warm.

    Repeat

    Repeat the process with the remaining ingredients to make a second omelet.

    Serve

    Serve the omelets hot, drizzled with extra mornay sauce if desired, alongside home fries.
