Prepare the Corned Beef
If using house-cured brisket, ensure it has been cured and cooked. Slice the brisket thinly and set aside.

Poach the Eggs
Bring a pot of water to a gentle simmer. Crack each egg into a small bowl, then carefully slide them into the water. Poach for 3-4 minutes until the whites are set but the yolks remain runny. Remove with a slotted spoon and set on a paper towel.

Prepare the Hollandaise Sauce
In a heatproof bowl, whisk together the egg yolks, lemon juice, and mustard. Place the bowl over a pot of simmering water, and slowly whisk in melted butter until the sauce is thickened. Add salt and pepper to taste.

Toast the English Muffins
Slice the English muffins in half and toast them until golden brown.
