Oysters and Accompaniments

Method

Preparation

  1. 1

    Prepare the Oysters

Rinse the oysters under cold water, shuck them, and place them on a tray. Discard the shells and set the oysters aside.

  2. 2

    Make the Breading

In one bowl, combine the cornmeal, flour, salt, black pepper, and cayenne pepper. In another bowl, whisk together the eggs and buttermilk.

  3. 3

    Coat the Oysters

Dip each oyster first into the egg mixture, then into the cornmeal mixture, ensuring they are well coated.

  4. 4

    Heat the Oil

In a deep frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  5. 5

    Fry the Oysters

Carefully place the coated oysters into the hot oil in batches, frying for about 2-3 minutes on each side or until golden brown. Remove and drain on paper towels.
