Chesapeake Rockfish Imperial Ingredients

Method

Chesapeake Rockfish Imperial Directions

  1. 1

    Prepare the Crab Imperial

In a large bowl, combine lump crab meat, mayonnaise, Dijon mustard, Old Bay seasoning, and panko breadcrumbs. Mix gently to avoid breaking up the crab. Set aside.

  2. 2

    Prepare the Rockfish

Preheat the oven to 375°F (190°C). Season the rockfish fillets with salt and pepper. Place them in a greased baking dish.

  3. 3

    Assemble the Dish

Spread the crab imperial mixture evenly over each rockfish fillet.

  4. 4

    Prepare the Pecan Butter

In a skillet, melt the butter over medium heat. Add the pecan halves and toast them in the butter until golden brown and fragrant. Remove from heat and set aside.

  5. 5

    Bake

Bake the rockfish in the preheated oven for 20-25 minutes or until the fish is cooked through and the crab topping is golden.

  6. 6

    Make Garlic Mashed Potatoes

While the fish is baking, peel and chop the potatoes. Boil them in salted water until tender. Drain and mash with milk, minced garlic, salt, and pepper until smooth.

  7. 7

    Cook the Vegetables

Steam or sauté the mixed vegetables until tender. Season with salt and pepper to taste.

  8. 8

    Serve

Plate the baked rockfish with crab imperial, drizzle toasted pecan butter over the top, and serve alongside garlic mashed potatoes and mixed vegetables.
