Prepare the Fries
Peel and cut the russet potatoes into fries. Rinse under cold water to remove excess starch, then pat dry with a towel. In a large pot, heat vegetable oil to 350°F (175°C). Fry the potatoes in batches for about 5-7 minutes until golden brown and crispy. Remove and drain on paper towels. Sprinkle with salt while hot.

Make the Slaw
In a large bowl, combine green cabbage, sliced fennel, julienned apple, and grated carrot. In a separate bowl, mix mayonnaise, apple cider vinegar, salt, and black pepper. Pour the dressing over the slaw mixture and toss until evenly coated. Refrigerate for at least 30 minutes before serving.
