    Prepare the Catfish Cakes

    1. In a large bowl, flake the cooked Chesapeake blue catfish fillets. Add breadcrumbs, eggs, green onions, Old Bay seasoning, salt, and black pepper. Mix well to combine and form into 4-6 patties.

    2. Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook the catfish cakes for about 4-5 minutes on each side, until golden brown. Remove and set aside.

    3. In a double boiler, whisk together the egg yolks and lemon juice until frothy. Gradually add melted butter while whisking continuously until the mixture thickens. Stir in whole-grain mustard and season with salt to taste.
