    Brining the Pork Chops

    Combine apple cider, salt, sugar, and black peppercorns in a pot. Heat over medium until salt and sugar dissolve. Cool completely, then submerge pork chops in the brine. Refrigerate for at least 4 hours, preferably overnight.

    Cooking the Pork Chops

    Preheat grill or skillet over medium-high heat. Remove pork chops from brine, pat dry, and season with black pepper. Sear pork chops for 6-7 minutes on each side or until internal temperature reaches 145°F (63°C).

    Making the Cornbread Stuffing

    In a saucepan, melt butter and add cornbread stuffing mix. Pour in chicken broth and stir until combined. Cook for about 5 minutes until heated through.

    Sautéing the Green Beans

    In a skillet, heat olive oil over medium heat. Add green beans and sauté for about 5 minutes. Stir in dried cranberries and walnuts, cooking for an additional 2-3 minutes. Top with crumbled goat cheese before serving.

    Plate the pork chops alongside a serving of cornbread stuffing and sautéed green beans. Drizzle with any remaining apple cider demi-glace if desired.
