Prepare the Blood Oranges
Preheat your oven to 350°F (175°C). Slice the blood oranges into thin rounds and remove any seeds. Set aside.

Make the Caramel Layer
In a round cake pan, melt the vegan butter over medium heat. Once melted, sprinkle the brown sugar evenly over the butter. Arrange the blood orange slices on top of the sugar mixture in a decorative pattern. Remove from heat.

Prepare the Cake Batter
In a mixing bowl, whisk together the flour, baking powder, baking soda, and salt. In another bowl, mix the almond milk and vanilla extract. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.

Combine and Bake
Pour the cake batter over the arranged blood oranges in the pan. Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.

Allow the cake to cool in the pan for about 10 minutes before inverting onto a serving plate. Serve warm or at room temperature.
