    Prepare the Potatoes

    In a medium pot, bring salted water to a boil. Add the diced potatoes and cook until tender, about 10-12 minutes. Drain and set aside.

    Make the Mustard Sauce

    In a small bowl, combine Dijon mustard, yellow mustard, spicy brown mustard, salt, and black pepper. Mix well and set aside.

    Prepare the Catfish

    Preheat your oven to 375°F (190°C). In a shallow dish, place the crushed Saltine crackers. Season the catfish fillets with salt and pepper, then coat each fillet in the crushed crackers.

    Cook the Catfish

    In a large skillet, heat olive oil over medium heat. Once hot, add the coated catfish fillets and cook for about 4-5 minutes on each side, or until golden brown and cooked through.

    On a plate, serve the fried catfish fillets alongside the cooked potatoes. Drizzle the three-mustard sauce over the catfish. Garnish with lemon wedges and enjoy!
