Prepare the Pork Tenderloin
Slice the pork tenderloin into thin cutlets (about 1/4 inch thick) and pound them lightly to tenderize.

In three separate shallow dishes, place flour in the first, beaten eggs in the second, and panko breadcrumbs mixed with salt and pepper in the third.

Bread the Pork
Dredge each pork cutlet in flour, shaking off excess, dip in the beaten eggs, and finally coat with panko breadcrumbs, pressing gently to adhere.

Fry the Schnitzels
In a large skillet, heat vegetable oil over medium-high heat. Fry the breaded cutlets in batches until golden brown and cooked through, about 3-4 minutes per side. Drain on paper towels.

Prepare Sauerkraut
Heat the sauerkraut in a small saucepan over low heat until warmed through.
