Prepare the Fries
Peel and cut the potatoes into thick fries. Soak them in cold water for at least 30 minutes, then drain and pat dry.

Make the Batter
In a bowl, mix the flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the beer until the batter is smooth.

Heat the Oil
In a large pot, heat vegetable oil to 350°F (175°C).

Fry the Potatoes
Once the oil is hot, fry the potatoes in batches until golden and crispy, about 4-5 minutes. Remove and drain on paper towels.

Fry the Fish
Dip the cod fillets into the batter, allowing excess to drip off, then carefully place them in the hot oil. Fry for about 4-6 minutes or until golden brown. Remove and drain on paper towels.

Prepare the Tartar Sauce
In a bowl, mix mayonnaise, chopped dill pickles, lemon juice, capers, and parsley. Adjust seasoning to taste.

Serve
Serve the fish and chips hot with the tartar sauce on the side.
