Marinate the Chicken
In a bowl, combine the buttermilk, salt, black pepper, and garlic powder. Add the chicken thighs and marinate for at least 2 hours or overnight.

Prepare the Spicy Flour
In a separate bowl, mix the flour, cayenne pepper, paprika, onion powder, and additional salt and pepper.

Dredge the Chicken
Remove the chicken from the buttermilk marinade, allowing excess to drip off. Dredge each piece in the spicy flour mixture, ensuring an even coating.

Fry the Chicken
In a large skillet, heat the vegetable oil over medium-high heat. Fry the chicken pieces until golden brown and cooked through, about 6-8 minutes per side. Drain on paper towels.

Assemble the Sandwich
On the bottom half of each brioche bun, place a piece of fried chicken, top with coleslaw, and add pickles. Close the sandwich with the top half of the bun.
