Prepare the Pork Tenderloin
Trim any excess fat from the pork tenderloin and slice it into 1-inch thick pieces. Use a meat mallet to pound each piece to about 1/2 inch thickness.

Fry the Pork
Heat the oil in a large skillet over medium-high heat. Once hot, add the breaded pork pieces and cook for about 3-4 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.

Make the Smoky Aioli
In a bowl, combine mayonnaise, smoked paprika, and garlic powder. Mix well and set aside.

Assemble the Sandwich
On the bottom half of each brioche bun, spread a generous amount of the smoky aioli, place a piece of fried pork, add lettuce and onion slices, and top with the other half of the bun.

Serve
Serve immediately while hot, with fries or a side salad if desired.
