Gazpacho Base

Buttermilk Sorbet

Method

Gazpacho Base Preparation

  1. 1

    Prepare the Vegetables

Chop the watermelon, cucumber, red bell pepper, red onion, and jalapeño pepper into small pieces. Remove the seeds from the cucumber and jalapeño for a milder flavor, if desired.

  2. 2

    Blend the Ingredients

In a blender, combine the chopped watermelon, cucumber, red bell pepper, red onion, jalapeño, lime juice, olive oil, salt, and black pepper. Blend until smooth and creamy.

  3. 3

    Chill the Gazpacho

Transfer the blended mixture to a bowl, cover, and refrigerate for at least 1 hour to allow flavors to meld.

Buttermilk Sorbet Preparation

  1. 4

    Mix the Sorbet Ingredients

In a mixing bowl, whisk together buttermilk, granulated sugar, and vanilla extract until the sugar is fully dissolved.

  2. 5

    Chill the Mixture

Place the mixture in the refrigerator for about 30 minutes to chill.

  3. 6

    Churn the Sorbet

Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

  4. 7

    Freeze the Sorbet

Transfer the sorbet to an airtight container and freeze for at least 2 hours to firm up.
