Preparation of Churros

    Boil the Potatoes

    Place the cubed potatoes in a pot and cover them with water. Bring the water to a boil over medium-high heat.

    Reduce the heat to medium and let the potatoes cook for about 15-20 minutes, or until they are fork-tender.

    Drain and Mash

    Once the potatoes are cooked, drain the water and mash the potatoes until smooth. Let them cool slightly.

    Prepare the Dough

    In a mixing bowl, combine the mashed potatoes, flour, egg, salt, baking powder, and black pepper. Mix until a smooth dough forms.

    Add Water

    Gradually add water to the dough mixture to achieve a smooth and somewhat elastic texture. The dough should be thick but pliable.

    Heat the Oil

    In a deep frying pan, heat the vegetable oil over medium heat. Test the oil temperature by dropping a small piece of dough; it should sizzle upon contact.

    Transfer the dough into a piping bag fitted with a star tip. Pipe long strips of dough directly into the hot oil, cutting them to your desired length.
