Prepare the Marinade
In a medium bowl, combine minced garlic, chopped fresh rosemary, olive oil, lemon juice, salt, black pepper, and honey. Whisk together until well mixed.

Marinate the Lamb
Place the spring lamb chops in a large resealable plastic bag or shallow dish. Pour the marinade over the lamb, ensuring each chop is well coated. Seal the bag or cover the dish, and refrigerate for at least 2 hours, preferably overnight.

Preheat the Grill
Preheat your grill to medium-high heat, ensuring it is well greased to prevent sticking.

Grill the Lamb
Remove lamb from the marinade, allowing excess marinade to drip off. Grill the lamb chops for about 4-5 minutes on each side for medium-rare, or until they reach your desired doneness.

Once cooked, remove the lamb from the grill and let it rest for about 5 minutes before serving. This allows the juices to redistribute for maximum flavor and tenderness.
