Gnudi Preparation

Prepare the Ricotta Mixture
In a large mixing bowl, combine the ricotta cheese, eggs, grated Parmesan cheese, chopped basil, salt, black pepper, and grated nutmeg. Mix until smooth and well combined.

Incorporate Flour
Gradually add in the all-purpose flour, mixing gently until a soft dough forms. Be careful not to overwork the dough, as this can make the gnudi tough.

Chill the Dough
Cover the bowl with plastic wrap and refrigerate the dough for at least 30 minutes to firm up.

Shape the Gnudi
Once chilled, dust your work surface with flour. Use a spoon or a small scoop to portion out the dough, then roll each piece into a ball about the size of a golf ball. Place the gnudi on a floured baking sheet.

Cook the Gnudi
Bring a large pot of salted water to a boil. Carefully drop the gnudi into the boiling water in batches, cooking until they float to the surface, about 2-3 minutes. Remove with a slotted spoon and set aside.

Prepare the Sage Brown Butter Sauce
In a large skillet, heat the olive oil over medium heat. Add the fresh sage leaves and sauté until they are crispy. Add the cooked gnudi to the skillet and toss gently to coat in the sage-infused oil.

Transfer the gnudi to a serving plate, drizzle with any remaining sage oil, and sprinkle additional grated Parmesan cheese on top before serving.
