Oysters with Passion Fruit Granita

Prepare the Passion Fruit Granita
In a small saucepan, combine the sugar and water. Heat over medium heat, stirring until the sugar is completely dissolved.

Add Passion Fruit
Remove the saucepan from heat and stir in the passion fruit pulp and lime juice. Mix well.

Freeze the Mixture
Pour the mixture into a shallow dish and place it in the freezer. Every 30 minutes, use a fork to scrape the mixture to create a granita texture. Continue this for about 2-3 hours until fully frozen and fluffy.

Prepare the Oysters
While the granita is freezing, prepare the oysters. Scrub the shells under cold running water to remove any dirt and debris. Using an oyster knife, carefully shuck the oysters, discarding the top shell but keeping the oyster and its liquid in the bottom shell.

Serve
Once the granita is ready, take it out of the freezer and fluff it with a fork. Place the shucked oysters on a serving platter and top each oyster with a spoonful of the passion fruit granita. Garnish with mint leaves.
