For the Grilled Octopus

    Prepare the Octopus

    Place the octopus in a large pot of salted water and bring to a boil. Reduce heat and simmer for 45 minutes to 1 hour or until tender. Remove from heat and let it cool in the water.

    Marinate the Octopus

    Once cooled, remove the octopus and cut it into tentacles. In a bowl, mix olive oil, minced garlic, juice of the lemon, paprika, salt, and black pepper. Toss the octopus tentacles in the marinade and let sit for at least 30 minutes.

    Grill the Octopus

    Preheat the grill to medium-high heat. Grill the marinated octopus for 3-4 minutes on each side until charred and slightly crispy.

For the Potato and Squash Blossom Tortilla

    Prepare the Potatoes

    Peel and finely dice the potatoes. Boil in salted water until fork-tender, about 10 minutes. Drain and set aside.

    Prepare the Squash Blossoms

    Gently rinse the squash blossoms, removing the stamen. Chop them into smaller pieces.

    Mix the Tortilla Ingredients

    In a bowl, whisk together eggs, milk, salt, and black pepper. Stir in the cooked potatoes and squash blossoms, followed by crumbled queso fresco.

    Cook the Tortilla

    Heat olive oil in a skillet over medium heat. Pour the mixture into the skillet and cook for about 5-7 minutes until the edges start to set. Carefully flip and cook the other side for another 5 minutes until golden brown.

For the Brown Butter Mole Negro

    Prepare the Mole

    In a dry skillet, toast the dried chiles until fragrant. Remove seeds and stems. Blend them with garlic, chocolate, cinnamon, and chicken stock until smooth.

    Brown the Butter

    In a saucepan, melt the butter over medium heat until it turns a deep golden brown. Be careful not to burn it.

    Combine and Simmer

    Add the blended mole mixture to the browned butter. Stir in salt and sugar. Simmer on low heat for 10-15 minutes, stirring occasionally.
