    Cook the Bacon

    In a skillet over medium heat, cook the bacon slices until crispy, about 5-7 minutes. Remove from skillet and drain on paper towels.

    Prepare the Avocado

    While the bacon is cooking, slice the avocado in half, remove the pit, and scoop the flesh out. Slice the avocado into thin slices and sprinkle with a pinch of salt and pepper.

Assemble the Melt

    Butter the Bread

    Spread butter on one side of each slice of sourdough bread.

    Layer Ingredients

    On the unbuttered side of two slices, layer the turkey breast, bacon, and Colby Jack cheese. Place the slices with toppings on the other two slices to form two sandwiches.

Grilling

    Grill the Sandwiches

    In the skillet used for bacon, place the sandwiches, buttered side down over medium heat. Grill until the bread is golden brown, about 3-4 minutes.

    Flip and Melt

    Carefully flip the sandwiches, and cook for an additional 3-4 minutes until the other side is golden brown and the cheese is melted.

    Plate the Sandwiches

    Remove the sandwiches from the skillet, cut them in half, and place on plates.

    Add Avocado

    Top each sandwich with sliced avocado and serve immediately.
