Preservation
Preparation
1. Wash the Fruits
Thoroughly wash the ripe strawberries and blueberries under cold running water to remove any dirt or pesticides.
2. Prepare the Strawberries
Remove the stems from the strawberries and slice them into halves or quarters, depending on their size.
Cooking
3. Combine Fruits and Water
In a large saucepan, combine the prepared strawberries, blueberries, and one cup of water. Bring the mixture to a boil over medium heat.
4. Simmer the Mixture
Once boiling, reduce the heat to low and let the fruit mixture simmer for about 10 minutes, stirring occasionally, until the fruits soften.
5. Add Sugar and Lemon Juice
Stir in one cup of granulated sugar and two tablespoons of lemon juice into the fruit mixture. Return to a gentle boil.
6. Add Pectin
Once boiling, sprinkle the fruit pectin evenly over the mixture while stirring continuously. Boil for an additional 1-2 minutes until the mixture thickens.
Canning
7. Prepare Jars
Sterilize your canning jars and lids by boiling them in water for 10 minutes. Remove and let them cool.
8. Fill Jars with Jelly
Using a ladle, fill the sterilized jars with the hot jelly mixture, leaving about 1/4 inch of headspace at the top.
9. Seal the Jars
Wipe the rims of the jars with a clean cloth to remove any residue. Place the lids on the jars and screw on the metal bands until they are fingertip-tight.
10. Process the Jars
Process the jars in a boiling water bath for 5 to 10 minutes to ensure they are sealed. Adjust time based on your altitude.
