Two scrambled eggs cooked with your choice of ham, bacon or sausage, and Colby Jack cheese and rolled into two warm flour tortillas. Served with a side of guacamole, lettuce and salsa cruda and a side of our zesty Ranchero sauce.

Cooking the Filling

    Scramble the Eggs

    In a medium bowl, crack the eggs and whisk them until the yolks and whites are fully combined. Heat a non-stick skillet over medium heat and add a little oil or butter. Pour in the eggs and gently scramble them with a spatula until cooked but still slightly soft.

    Add Meat and Cheese

    Once the eggs are scrambled, add your choice of ham, bacon, or sausage to the skillet. Stir to combine and allow the mixture to heat through for about 2-3 minutes. Finally, add the Colby Jack cheese and stir until melted and evenly distributed.

Assembling the Taquitos

    Warm the Tortillas

    In a separate skillet or on a griddle, warm the flour tortillas over low heat for about 30 seconds on each side, or until pliable.

    Fill the Tortillas

    Place a generous portion of the scrambled egg and meat mixture in the center of each tortilla. Roll the tortillas tightly around the filling to form taquitos.

Serving

    Plate the Taquitos

    Place the rolled taquitos on a plate. Serve with a side of guacamole, shredded lettuce, and salsa cruda.

    Add Ranchero Sauce

    Drizzle or serve the zesty Ranchero sauce on top of the taquitos or on the side for dipping.
