Preparing the Filling

    Mix Filling Ingredients

    In a large mixing bowl, combine the shredded chicken, black beans, corn, softened cream cheese, shredded cheddar cheese, sour cream, taco seasoning, and chopped green onions.

    Mix all the ingredients together until they are well combined and creamy. Set aside.

Assembling the Egg Rolls

    Prepare Wrapper

    Lay out an egg roll wrapper on a clean surface with one corner facing you.

    Add Filling

    Spoon about 2-3 tablespoons of the chicken filling onto the center of the wrapper.

    Roll and Seal

    Fold the bottom corner over the filling, then fold in the sides, and roll tightly towards the top corner. Seal the edge with a bit of water.

    Repeat the process with the remaining wrappers and filling.

Frying the Egg Rolls

    Heat Oil

    In a deep skillet or pot, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry Egg Rolls

    Carefully add the egg rolls to the hot oil, a few at a time, and fry until golden brown, about 3-4 minutes per side.

    Using a slotted spoon, remove the egg rolls and drain on paper towels.

    Serve the hot egg rolls with ranch dressing on the side for dipping.
