Preparation

    Prepare the Ingredients

    Gather all ingredients. Drain the sauerkraut and pat it dry with a paper towel to remove excess moisture.

Assembling the Sandwich

    Layer the Ingredients

    Take two slices of marble rye bread. On one slice, layer 6 oz of sliced corned beef, followed by 1/2 cup of sauerkraut, and 2 oz of Swiss cheese. Top with another slice of marble rye bread.

    Repeat for Second Sandwich

    Repeat the layering process for the second sandwich using the remaining ingredients.

Grilling the Sandwiches

    Heat the Pan

    In a skillet or griddle, melt 1 tablespoon of unsalted butter over medium heat.

    Grill the First Sandwich

    Once the butter is melted and bubbling, place the first assembled sandwich in the skillet. Grill for about 4-5 minutes on one side until golden brown.

    Flip the Sandwich

    Carefully flip the sandwich and add another tablespoon of butter to the skillet. Grill for another 4-5 minutes until the second side is golden brown and the cheese is melted.

    Repeat for Second Sandwich

    Remove the first sandwich from the skillet, cover to keep warm, and repeat the grilling process for the second sandwich.

Serving

    Slice each sandwich in half and serve immediately with a side of Thousand Island dressing for dipping.
