    Prepare the Roast

    Season the chuck roast with salt and black pepper on all sides.

    Sear the Roast

    In a large skillet, heat olive oil over medium-high heat. Once hot, add the seasoned roast and sear for about 4-5 minutes on each side until browned. Remove from skillet and set aside.

    Sauté the Vegetables

    In the same skillet, add chopped onion, carrots, and garlic. Sauté for about 5 minutes until the onions are translucent.

    Combine Ingredients in Slow Cooker

    Transfer the sautéed vegetables to a slow cooker. Place the seared roast on top of the vegetables. Add the potatoes, beef broth, Worcestershire sauce, thyme, and bay leaves.

    Cook the Roast

    Cover the slow cooker and cook on low for 7-8 hours or until the meat is tender and easily pulls apart.

    Make the Gravy

    Once the roast is cooked, remove the meat and vegetables from the slow cooker and set aside. To make the gravy, strain the cooking liquid into a saucepan.

    Thicken the Gravy

    In a small bowl, mix cornstarch and water to create a slurry. Add the slurry to the strained cooking liquid in the saucepan. Heat over medium heat, stirring constantly until the gravy thickens.

    Serve

    Slice the pot roast and serve with the vegetables, drizzled with the brown gravy.
