Prepare the Roast
Season the chuck roast with salt and black pepper on all sides.

Sear the Roast
In a large Dutch oven, heat the olive oil over medium-high heat. Add the roast and sear for about 3-4 minutes on each side until browned.

Cook the Roast
Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 3-4 hours until the roast is tender.
For the Brown Gravy

Add Broth
Gradually add the beef broth while whisking continuously to avoid lumps. Bring to a simmer and cook until thickened, about 5 minutes.

Season with salt and black pepper to taste. Set aside until ready to serve.
