For the Mozzarella Sticks

Method

For the Mozzarella Sticks

  1. 1

    Prepare the Breading

Set up a breading station with three shallow bowls. Fill the first bowl with flour, the second bowl with beaten eggs, and the third bowl with bread crumbs mixed with garlic powder, oregano, salt, and pepper.

  2. 2

    Bread the Cheese Sticks

Take each mozzarella stick and coat it first in flour, then dip it into the egg, and finally roll it in the bread crumb mixture until fully coated. Repeat for all mozzarella sticks.

  3. 3

    Chill the Coated Sticks

Place the breaded mozzarella sticks on a baking sheet and freeze for at least 30 minutes to help them keep their shape while frying.

  4. 4

    Heat the Oil

In a deep pot, heat vegetable oil over medium heat until it reaches 350°F (175°C). Use a thermometer for accuracy.

  5. 5

    Fry the Cheese Sticks

Carefully add the frozen mozzarella sticks to the hot oil in batches, frying for about 2-3 minutes or until golden brown and crispy. Use a slotted spoon to remove them and drain on paper towels.

For George's Ranchero Sauce

  1. 6

    Sauté the Vegetables

In a medium saucepan, heat a tablespoon of oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add minced garlic and jalapeño, cooking for another 2 minutes.

  2. 7

    Combine Ingredients

Stir in the canned diced tomatoes, lime juice, cilantro, salt, and pepper. Bring the mixture to a simmer.

  3. 8

    Cook the Sauce

Let the sauce simmer for about 10-15 minutes, stirring occasionally until slightly thickened. Adjust seasoning to taste.
