Huevos Rancheros

    Prepare the tortillas

    Warm the flour tortillas in a skillet over medium heat for about 30 seconds on each side or until soft and pliable. Keep them warm in a clean kitchen towel.

    Cook the eggs

    In a non-stick skillet, heat the olive oil over medium heat. Crack the eggs into the skillet and season with salt and black pepper. Cook the eggs sunny-side up until the whites are set but the yolks are still runny, about 3-4 minutes.

Refried Beans

    Prepare the beans

    In a small saucepan, heat the olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant. Drain and rinse the canned pinto beans, then add them to the saucepan along with cumin. Mash the beans with a fork or potato masher until they reach your desired consistency. Add salt to taste and stir until heated through.

    Assemble the toppings

    Shred the lettuce and set aside. Prepare the salsa cruda and guacamole if not using store-bought. Make sure all toppings are ready to serve alongside the eggs and tortillas.

    Make the Ranchero Sauce

    In a blender or food processor, combine chopped tomatoes, onion, jalapeño, cilantro, lime juice, and salt. Blend until smooth or to your desired consistency. Adjust seasoning as necessary.
