    In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, and salt. Whisk together until well blended.

    In another bowl, whisk together the milk, egg, vanilla extract, and melted butter until the mixture is smooth and well combined.

    Combine Mixtures

    Pour the wet ingredients into the bowl with the dry ingredients. Stir gently until just combined; do not overmix. The batter should be lumpy.

    Preheat Cooking Surface

    Heat a non-stick skillet or griddle over medium heat. Add a small amount of butter or oil to grease the surface.

    Cook Hotcakes

    Pour about 1/4 cup of batter onto the skillet for each hotcake. Cook until bubbles form on the surface, about 2-3 minutes. Flip and cook for another 2-3 minutes until golden brown.
