Method

Preparing the Broth

    Combine Ingredients

    In a large pot, combine the beef broth, water, ham hock, garlic cloves (minced), chopped onion, bay leaves, salt, and black pepper. Bring to a boil over medium-high heat.

    Simmer

    Once boiling, reduce heat to low, cover the pot, and let it simmer for about 30 minutes to allow the flavors to meld.

Adding Vegetables and Beans

    Prepare Vegetables

    While the broth is simmering, chop the carrots, celery, and potatoes into bite-sized pieces. Drain and rinse the canned white beans.

    Add to Pot

    After 30 minutes, add the prepared carrots, celery, potatoes, green beans, white beans, corn, and spinach to the broth. Stir well.

    Season

    Add the dried thyme to the pot and mix everything together. Adjust seasonings if needed.

Cooking the Soup

    Cook

    Increase the heat to medium and let the soup cook for an additional 20-25 minutes, or until the vegetables are tender.

    Finish

    Taste and adjust seasoning with additional salt and pepper if desired. Remove the ham hock and shred any meat to return to the soup.

Serving

    Serve the Soup

    Ladle the soup into bowls and garnish with fresh chopped parsley. Serve with warm rolls on the side.
