    Prepare the Vegetables

    Slice the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash the avocado with a fork and season with salt and pepper to taste. Slice the tomato into thin rounds.

    Assemble the Sandwich

    On one slice of sourdough bread, layer the American cheese, Monterey Jack cheese, and Pepper Jack cheese. Add a generous layer of the mashed avocado and top with sliced tomatoes. Place another slice of sourdough on top.

    Grill the Sandwich

    In a skillet over medium heat, melt 1 tablespoon of butter. Once melted, place the assembled sandwich in the skillet. Cook for about 3-4 minutes until the bottom is golden brown. Carefully flip the sandwich, adding the remaining tablespoon of butter to the skillet. Cook for an additional 3-4 minutes until the other side is golden and the cheese has melted.

    Remove the grilled cheese from the skillet, cut it in half, and serve immediately while hot with your favorite dipping sauce or side.
