Preparing the Hash Browns

Prepare the Potatoes
Peel and grate the Russet potatoes using a box grater or a food processor. Rinse the grated potatoes in cold water to remove excess starch, then drain well and pat dry with a clean kitchen towel.

Cook the Hash Browns
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the grated potatoes, season with salt and black pepper, and press down with a spatula to form a flat layer. Cook for about 5-7 minutes until the bottom is golden brown. Flip the hash browns and add the remaining olive oil to the skillet. Cook the other side for another 5-7 minutes until golden and crispy.

Sauté the Vegetables
In a separate skillet, heat a tablespoon of olive oil over medium heat. Add the chopped onion and green bell pepper. Sauté for about 5-7 minutes until the vegetables are softened and slightly caramelized.

Add the Meat
Stir in your choice of diced ham, crumbled bacon, or cooked sausage into the sautéed vegetables. Cook for an additional 3-4 minutes to heat through.

Combine Everything
Once the hash browns are cooked, top them with the sautéed onion, green pepper, and meat mixture. Sprinkle the cheese of your choice evenly over the top.

Cover the skillet with a lid and let it cook for an additional 2-3 minutes, or until the cheese is melted and bubbly.
