American fries with sauteed onions, green peppers, tomatoes and a choice of ham, bacon or sausage. Topped with Colby Jack cheese and two eggs any style. Served with a side of our zesty Ranchero sauce. Includes a choice of toast, side of hotcakes or a biscuit and gravy.

Main Dish Preparation

    Prepare the Ingredients

    Wash and chop the onion, green bell pepper, and tomato. If using ham, bacon, or sausage, dice or crumble as needed.

    Cook the American Fries

    In a large skillet over medium heat, add the American fries. Cook until golden and crispy, about 10-15 minutes, stirring occasionally.

    Sauté the Vegetables and Meat

    In the same skillet, add a bit of olive oil if necessary. Add the chopped onion and green bell pepper. Sauté for 3-4 minutes until softened. Add the diced tomato and your choice of meat. Cook for another 3-4 minutes.

    Add Cheese and Eggs

    Sprinkle the Colby Jack cheese over the mixture in the skillet. Crack the eggs on top, cover with a lid, and cook until the eggs are set to your liking (about 5 minutes for sunny side up).

Ranchero Sauce Preparation

    Prepare the Ranchero Sauce

    In a small saucepan, heat the olive oil over medium heat. Add finely chopped onion and garlic. Sauté until translucent.

    Add Tomatoes and Spices

    Stir in the diced tomatoes, chili powder, cumin, salt, and black pepper. Simmer for about 10 minutes, stirring occasionally until slightly thickened.

Serving

    Plate the Skillet Dish

    Once the eggs are cooked, carefully slide the skillet mixture onto a plate.

    Add Ranchero Sauce

    Drizzle the ranchero sauce over the skillet dish.

    Serve with Extras

    Add your choice of toast, biscuit, or hotcakes on the side.
