George's Chips & Guacamole Recipe

Guacamole

Prepare Avocados
Cut the avocados in half, remove the pits, and scoop the flesh into a mixing bowl.

Mash Avocados
Using a fork or potato masher, mash the avocados to your desired consistency, leaving some chunks if you prefer.

Add Ingredients
Add lime juice, finely chopped red onion, diced tomato, chopped cilantro, salt, and black pepper to the mashed avocados.

Mix
Mix all the ingredients together until well combined. Taste and adjust seasoning if necessary.

Mix
Mix until all ingredients are well incorporated. Adjust seasoning if needed.
Chips

Heat Oil
In a large frying pan, heat the vegetable oil over medium-high heat until hot.

Cut Tortillas
Cut each corn tortilla into quarters to form chips.

Fry Chips
Carefully add the tortilla quarters to the hot oil in batches. Fry until golden brown and crispy, about 2-3 minutes per batch.

Drain Chips
Using a slotted spoon, remove the chips from the oil and place them on a paper towel-lined plate to drain excess oil.

While the chips are still hot, sprinkle them with salt to taste.
