Prepare the Potatoes
Wash and peel the Russet potatoes. Cut each potato into thin strips, approximately 1/4 inch thick.

Soak the Potatoes
Place the cut potato strips in a large bowl filled with cold water. Let them soak for at least 30 minutes to remove excess starch.

Dry the Potatoes
After soaking, drain the water and spread the potato strips on a clean kitchen towel or paper towels. Pat them dry to remove any moisture.

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can use a thermometer to check the temperature.

Fry the Potatoes
Carefully add a handful of the dried potato strips to the hot oil. Fry in batches, making sure not to overcrowd the pan. Cook for 5-7 minutes or until golden brown and crispy.

Drain and Season
Once cooked, use a slotted spoon to remove the fries from the oil and place them on a plate lined with paper towels to drain excess oil. Immediately sprinkle with salt, pepper, garlic powder, and paprika.
