Preparing the Fish

    Prepare the Battering Mixture

    In a mixing bowl, combine the flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the beer until the batter is smooth and free of lumps.

    Heat the Oil

    In a large, deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Batter the Cod

    Dip each cod fillet into the batter, ensuring they are well coated.

    Fry the Cod

    Carefully place the battered cod fillets into the hot oil, frying in batches if necessary. Fry for about 4-5 minutes or until golden brown and cooked through. Remove and drain on paper towels.

Making the Tartar Sauce

    Combine Ingredients

    In a small bowl, mix together the mayonnaise, dill pickles, capers, lemon juice, and dijon mustard. Season with salt and black pepper to taste.

Assembling the Sandwich

    Build the Sandwich

    On the bottom half of each toasted bun, place a generous amount of shredded lettuce, followed by one piece of fried cod. Top with tartar sauce, and place the top half of the bun on to finish.

    Serve the fish sandwiches immediately while hot, accompanied by fries or a side salad if desired.
