Preparing the Fish

Grill the Haddock
Preheat the grill to medium-high heat. Season the haddock fillets with salt and pepper. Melt half of the butter in a small saucepan and mix with chopped parsley, dill, lemon juice, and minced garlic. Brush the herb mixture over the haddock fillets. Grill for about 4-5 minutes on each side or until the fish is opaque and flakes easily with a fork.

Prepare the Cod
In a bowl, mix flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the beer until the batter is smooth. Heat oil in a deep fryer or large pot to 350°F (175°C). Dip the cod fillets in the batter and fry until golden brown, about 4-5 minutes. Drain on paper towels.

Fry the Catfish
Season catfish fillets with salt and pepper. Heat oil in a frying pan over medium heat and fry the catfish for 4-5 minutes on each side, or until golden brown and cooked through.
Making the Hushpuppies

Prepare the Batter
In a mixing bowl, combine cornmeal, flour, baking powder, sugar, and salt. In another bowl, mix the beaten egg, milk, and chopped onion. Combine the wet and dry ingredients and stir until just combined.

Fry the Hushpuppies
Heat oil in a deep fryer or large pot to 350°F (175°C). Drop spoonfuls of the batter into the hot oil and fry until golden brown, about 3-4 minutes. Remove and drain on paper towels.
Making the Tartar Sauce

Combine Ingredients
In a bowl, mix mayonnaise, relish, lemon juice, and chopped dill. Stir until well combined. Refrigerate until ready to serve.
Serving

Plate the Dish
Serve grilled haddock, fried cod, or fried catfish alongside hushpuppies. Add a side of tartar sauce and garnish with lemon wedges.
