Fish Preparation

Prepare the Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the beer (or sparkling water) until the batter is smooth and well combined.

Heat the Oil
In a deep frying pan or a large pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Batter the Cod
Dip each cod fillet into the batter, ensuring it's fully coated.

Fry the Cod
Carefully place the battered cod fillets into the hot oil. Fry for about 4-5 minutes on each side or until golden brown and cooked through. Remove and place on a paper towel-lined plate to drain excess oil.

Prepare the Potatoes
Peel the russet potatoes and cut them into thin strips (about 1/4 inch thick) to resemble fries.

Soak the Fries
Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch, then drain and pat dry.

Fry the Potatoes
In a separate pot, heat the vegetable oil to 350°F (175°C). Carefully add the fries in batches and fry for about 3-4 minutes or until they turn golden and crispy. Remove and drain on paper towels, then sprinkle with salt.
Tartar Sauce Preparation

Mix the Sauce
In a small bowl, combine the mayonnaise, chopped dill pickles, capers, lemon juice, and Dijon mustard. Stir until well mixed. Season with salt and black pepper to taste.

Chill the Sauce
Cover and refrigerate the tartar sauce for at least 30 minutes to allow the flavors to meld.
