Steak Preparation

    Prepare the Steak

    Cut the beef round steak into serving portions if necessary, and pound them to an even thickness of about 1/2 inch.

    Season the Flour

    In a shallow dish, mix together the all-purpose flour, salt, black pepper, and garlic powder.

    Dredge the Steak

    Dip each piece of the steak into the buttermilk, allowing excess to drip off, then dredge in the seasoned flour until fully coated. Set aside.

    Heat the Oil

    In a large skillet, heat the vegetable oil over medium-high heat until hot, approximately 350°F (175°C).

    Fry the Steak

    Carefully place the breaded steaks into the hot oil, frying for about 3-4 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

    Cook the Sausage

    In a separate skillet, cook the breakfast sausage over medium heat, breaking it into small pieces until browned and cooked through.

    Make the Roux

    Sprinkle the 4 tablespoons of all-purpose flour over the cooked sausage and stir to combine, cooking for about 1 minute.

    Add Milk

    Slowly whisk in the milk, stirring constantly to prevent lumps. Continue cooking until the gravy thickens, about 5 minutes.

    Season the Gravy

    Season the gravy with black pepper and salt to taste. If the gravy is too thick, add a little more milk to reach the desired consistency.
