Cake Ingredients

Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C). This ensures that the cakes cook evenly.

  2. 2

    Prepare Ramekins

Grease four 6-ounce ramekins with butter and dust them with flour, tapping out any excess. This will help the cakes release easily after baking.

Making the Batter

  1. 3

    Melt Butter and Chocolate

In a microwave-safe bowl, combine the unsalted butter and semisweet chocolate chips. Microwave in 30-second intervals, stirring in between, until fully melted and smooth.

  2. 4

    Mix Sugar and Eggs

In a large mixing bowl, whisk together the granulated sugar, large eggs, large egg yolks, and vanilla extract until well combined and slightly frothy.

  3. 5

    Combine Mixtures

Gradually add the melted chocolate mixture to the egg mixture, stirring continuously to prevent cooking the eggs.

  4. 6

    Add Dry Ingredients

Sift the all-purpose flour and salt into the chocolate and egg mixture, folding gently until just combined. Be careful not to overmix.

Baking

  1. 7

    Fill Ramekins

Evenly distribute the batter among the prepared ramekins, filling each about 3/4 full.

  2. 8

    Bake the Cakes

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes. The edges should be firm, but the center will still be soft.

  3. 9

    Cool Slightly

Once baked, remove the ramekins from the oven and allow them to cool for about 1 minute. This helps set the edges while keeping the center gooey.

  4. 10

    Serve

Carefully invert each ramekin onto a dessert plate. Let it sit for a few seconds, then gently lift the ramekin off. Serve immediately, optionally with vanilla ice cream or whipped cream.
