Cooking the Pork

    Prepare the Pork

    Cut the pork shoulder into 1-inch chunks and season with salt and pepper.

    Sear the Pork

    In a large pot or Dutch oven, heat olive oil over medium-high heat. Add the pork chunks and sear until browned on all sides, about 5-7 minutes.

    Sauté Onions and Garlic

    Add the chopped onion and minced garlic to the pot. Sauté until the onion is translucent, about 3-4 minutes.

    Add Sauce Ingredients

    Stir in the diced green chilies, chicken broth, cumin, and lime juice. Bring to a simmer.

    Slow Cook the Pork

    Lower the heat to a gentle simmer, cover, and cook for 2-3 hours until the pork is tender and easily shredded.

Assembling the Burritos

    Prepare Tortillas

    Warm the flour tortillas in a dry skillet or microwave until pliable.

    Fill Tortillas

    Spread a layer of refried beans onto each tortilla, followed by a generous serving of the cooked pork and green sauce.

    Roll the Burrito

    Fold in the sides of the tortilla and then roll it up tightly from the bottom to the top.

    Serve

    Serve the burritos with sour cream and guacamole on the side.
