Prepare the Omelette Base

Whisk the Eggs
In a large bowl, whisk together the eggs, milk, salt, and black pepper until fully combined and slightly frothy.

Cook the Omelette
Heat a non-stick skillet over medium heat. Pour the egg mixture into the skillet and let it cook undisturbed until the edges begin to set.
Cook the Filling

Brown the Meat
In a separate skillet, cook the ground beef or turkey over medium heat until browned, breaking it apart with a spatula. Drain excess fat if necessary.

Add Seasoning
Stir in the taco seasoning and a splash of water. Cook for an additional 2-3 minutes, until the meat is well-coated and heated through.
Assemble the Burrito Omelette

Add Filling
Once the omelette edges are set, spoon the seasoned meat, refried beans, and Monterey Jack cheese onto one half of the omelette.

Fold and Finish Cooking
Carefully fold the omelette over the filling. Continue to cook for another 2-3 minutes until the cheese melts and the omelette is cooked through.

Transfer the omelette to a plate. Top with Ranchero sauce, a dollop of sour cream, and a sprinkle of sliced black olives.
